Prosciutto & Carrot Salad Sandwich

We have a recipe for Carrot & Raisin Salad on the site. It makes a lot, so we thought you all may have leftovers and decided to create a different recipe to make sure none of your salad goes to waste.

 

The idea for a prosciutto and carrot salad sandwich came about as we were thinking of the classic French pan bagnat and Italian sub. We arrived at this - our Southern version of a veggie and meat stuffed sandwich. It’s a perfect blend of sweet and savory, and we hope you enjoy it as much as we do!

Ingredients


1/4 baguette    

4 slices prosciutto     


Method


  1. Slice the baguette in half lengthwise using a serrated knife. Hollow out each piece using your hands to at least half of its thickness.                  

  2. Spoon the carrot and raisin salad onto one half of the hollowed baguette, top with the prosciutto, and cover with the piece of bread.     


Notes For Prosciutto & Carrot Salad Sandwich


  • Although we think our carrot salad is the best, you can always buy store-bought in a pinch and make this salad if you don't have any homemade salad on hand.
