We have a recipe for Carrot & Raisin Salad on the site. It makes a lot, so we thought you all may have leftovers and decided to create a different recipe to make sure none of your salad goes to waste.

The idea for a prosciutto and carrot salad sandwich came about as we were thinking of the classic French pan bagnat and Italian sub. We arrived at this - our Southern version of a veggie and meat stuffed sandwich. It’s a perfect blend of sweet and savory, and we hope you enjoy it as much as we do!
Ingredients
1/4 baguette   Â
3/4 cup carrot and raisin saladÂ
4 slices prosciutto    Â
Method
Slice the baguette in half lengthwise using a serrated knife. Hollow out each piece using your hands to at least half of its thickness.                 Â
Spoon the carrot and raisin salad onto one half of the hollowed baguette, top with the prosciutto, and cover with the piece of bread.    Â
Notes For Prosciutto & Carrot Salad Sandwich
Although we think our carrot salad is the best, you can always buy store-bought in a pinch and make this salad if you don't have any homemade salad on hand.
